What happens when you bake one giant popover in a cast iron skillet in the oven? You end up with a heavenly German pancake known as Pannekoeken.

Popovers were one of the first breads I learned to make after I was married. They simply were too adorable not to try. Now, 25 years later, I discovered what a German pancake is from the best bed and breakfast in Minnesota. I thought I’d gone to heaven when it came out of the kitchen and wanted to know how I ever existed without knowing about these tasty pancakes that are a giant popover!


To Make:

These are very simple to make and can be adjusted based on the size of your skillet or skillets. This is for a 10-inch skillet.

Preheat your oven to 400 F.  Whisk 4 large eggs with 3/4 cup of milk in a medium bowl.

Add in 3/4 cup of flour and 1/2 tsp of salt and whisk until the batter is smooth. Add in 1/2 tsp of ginger.

Add your 4 tbsp of butter into the iron skillet in the oven until it is melted and begins to bubble. Pull it out of the oven, then pour the batter into the skillet and return it into the oven.

Bake for 20-25 minutes until the pancake is puffed up and brown on the edges. It is ok if they flop over.

The pancake can be cut in wedges and sprinkled with powdered sugar. Top it off with your favorite fresh fruit and serve with real maple syrup and whipped cream.
