Summertime Strawberry Pie

To me Strawberry Pie means it is summertime.

After having this pie once, it quickly became my birthday favorite. The fresh strawberries and whipped cream are divine.


To Make:

In a large bowl, combine 1 cup of sugar with the 1 pound of strawberries. Let it stand and marinate for a half hour until the juices are nice and thick.

Drain the juice into a quart pan and bring to a boil on the stove.

Mix in a small bowl 2 1/3 tablespoons of cornstarch, 1 tablespoon of melted butter and 1/4 cup of water and add it into the pan on the stove and lower the heat to low and cook for 2 minutes covered.

Let the mixture cool until slightly warm and then stir in the strawberries.

Pour the berries into a 8 inch pastry shell and put in the refrigerator and chill. Top it with whipped cream.
