White Cheddar Mashed Potatoes

These may be the most creamy, delicious mashed potatoes I’ve ever tasted. 

They are only for special occasions, since they are filled with amazing goodness that could probably induce an heart attack with the amount of butter and dairy in them, but oh my goodness, they taste oh-so-good. Living in moderation is what I keep telling myself each and every time I make these, and promise to diet for the following week…


To Make:

I am someone who believes in using short cuts. Since discovering pre-washed, ready to make potatoes, I’ve been using them in mashed potatoes and will never go back.

Microwavable Potatoes

For dinner, take two bags, which are 3 lbs of potatoes, and microwave according to the instructions on the bags. Slice into small quarters and put into a large mixer bowl.

Add 1 stick of unsalted butter and begin mashing.

Add one 1/2 cup of light cream and mix with the butter and potatoes.

Slowly add in one bag of white cheddar shredded cheese and mix until blended.

I use the kitchen aid mixer flat mixer attachment for the mashed potatoes to get them nice and fluffy.

 

 

 

 

 

 

 

Add 1 tsp of kosher salt and 1/2 tsp of ground pepper. Add parsley for garnish. Perfect to serve!
