Going bananas for a light bread.

When you move around the country, you make a lot of good friends. This recipe comes from Ann McMahon who is a close friend of our matriarch, Doris Palmer, and Godmother to one of her six children from her time living in Acton, Massachusettes.


To Make:

Cream 1/2 cup of shortening and cup of sugar in a bowl until it is mixed well.

Add the 2 eggs and whisk thoroughly. Add in the three bananas and mix together.

Fold in dry ingredients (2 cups of flour, 1 teaspoon of baking powder and 1 teaspoon of baking soda) and mix well.

Pour into greased and floured pan(s) and bake at 325F degrees in the oven for 65 min or so.

Makes one large loaf or 3 mini loaves.

  • 1/2 C Margarine, Butter, or Crisco
  • 1 C Sugar
  • 2 Large Eggs
  • 3 Large Bananas
  • 2 C Flour
  • 1 Tsp Baking Powder
  • 1 Tsp Baking Soda
Method
