Fruit salad is a dish that can dress up any dining table.

Doris Palmer made this dish for any special occasion. This is her mother’s recipe, Matilda Moritz Rickbeil. Perfect for a summer picnic.


To Make:

Bring the juice from the pineapple can and the lemon to a boil in a large sauce pan. Add 1 C sugar and 2 well beaten eggs and 2 tsp of butter to the pan and cook it until mixture is thick. Take the pan off the stove and let it cool.

Cut up fruit into small pieces. Add them to the cool mixture and blend with a plastic spatula. Add one bag of mini marshmallows.

Can keep in the refrigerator for 4 days or be frozen.
