Every turkey needs a little gravy.

This recipe comes from Doris Palmer who taught me this while making the turkey. It is the right balance without being overwhelming.

To Make:

To prepare this gravy, it is easy to do at the same time as you have finished cooking the turkey.

Finely chop up the carrots, celery and onion and let it simmer in a 1/2 cup of water in the same pan you cooked the turkey in – this will help keep the taste all together and yummy.

Add the boullion cubes for additional flavor with the rosemary, parsley and simmer with the turkey’s giblets for 2 hours while you are preparing the rest of the thanksgiving dinner.

Strain the stock, salt to taste.  Keep warm until dinner is served.
